July 4th Smoke - What's ya cookin'?


 
my son's 5th birthday is tomorrow, so saturday we are having a 4th of july/birthday party. i have 4 butts,an 8 pound brisket flat,brats,hotdogs and hamburgers. i might make some ABTs but everyone else is bringing the sides. should be about 25 people,maybe 30.
 
Prime Ribeyes on the kettle on Friday. 2 briskets going on the WSM at 8pm Friday evening.

Scored a 14-cup Cuisinart food processor for cheap on Amazon--it makes the slaw a lot easier to make. Going out on a limb and attempting my first blackberry pie on Saturday.
 
I'll be smokin' and grillin' all day Friday and Saturday!

I'll be smoking up some pork shoulders, ATB's and stuffed poblano peppers! And the grills will be stuffed with burgers, dogs, kabobs and kielbasa/sausage.

...now let's just pray for SUN as it's been cloudy here in the NE for 3/4 of June (ugh).

I checked with the butcher at our local Vons (Safeway in Fresno) and he says that they aren't very good. They are from Australia, and lack meat as they are mostly fat. Heck who knows...

I wondered the same thing George, but knowing Larry, he won't have any problems consuming the usual amounts. Sure going to miss his ribs though, damn they're the best I have ever eaten.
 
Friday I've got a couple nice tri-tips to eat as a primer for the weekend. Saturday I'm cooking for a party of 50, chuck roast and turkey(s) which will be fun. Sunday i'm doing some spares for my brother since he will be in town and doesn't know what a good rib should taste like, nor that anything but baby backs even exist. If all goes according to plan, the WSM should scarcely get cold for about 3 days!
 
Going to be doing Butt over Briskett (yeah, I learned a new term). Every year my sister has a blow out 4th of July party. All day event with up to 200 people in and out.

We have five people competiting in an "informal" competition. This year its brisket. I'm a little worried as this is a new smoker (two cooks on it so far) and I've never done a brisket. Wish me luck!

My advice is to get kids interested in reading as early as possible and never deny them any school activities. My kids always have liked to go to school which made it easy on us parents.

It wasn't right. They were "Danish" spares? 3 racks to a box, and they were not very meaty at all. Worth a shot though - Safeway is only a half mile from my house. I'll be checking the ads tomorrow for the updates on the specials. I pass a Bloom, Wegman's, Giant, Shoppers and Safeway all on my way home from work. And HT is only a mile and a half from the house. There's bound to be a good sale somewhere this week.
 
having some friends visiting from nor-cal, small gathering. probably do a smoky meatloaf and some ABT's.
 
Going camping with my Sisters and their families and my Mom and Dad. Doing 6 racks of back ribs on the top, and a 9 lb butt on the bottom.

That is one beautiful bird.

I found butts on sale today for 97 cents/lb at a local grocer. Got home expecting a huge hunk of fat to be hidden under neath. To my surprise they were trimmed up just the way I like them, I think I cut maybe a quarter pound of scrap off of 4 butts....Sorry, I'm just happy about my discovery and had to share.

Looks like 4 butts around 7 lbs each for an overnighter Friday/Saturday.
