July 4th Smoke - What's ya cookin'?

I'll actually be cooking chicken and ribs on July 3rd, as I received an invite to a big 4th of July party on Saturday. I'd love to do another brisket (just did one this weekend) but I haven't had ribs in almost 6 months...so I think it's time!!!
 
well my WSM is supposed to arrive by BROWN on the 3rd, but since they usually deliver me last at 7PM or later, I probably won't fire that up on the 4th, but I will do something maybe chops. steak not sure yet...
 
I'm Canadian, but what the heck, I'll celebrate 4th of July with some pulled pork. And I might even drink some American beer. For some reason, in Ontario, Anchor Steam is really well priced and it's one of my faves.

I'll probably smoke some pork hocks as well, to add some meaty goodness to baked beans.

Friday Night: Ribeye steaks on the kettle
Saturday Lunch: Overnight Pork Butt on the WSM
Saturday Diner: Dogs/Brats/Burgers on the kettle
 
Our Daughters graduation party is the 5th so I am cooking a bunch of pork on the 4th. She wanted a pasta bar 'alfredo' 'asian bow tie' and a cold spinach,parmesan pasta that she loves. Lots of garlic bread and a caesar salsd.

She says my pork is great now so we also are having pulled pork, beans,regular and blue cheese slaw too. What ever she wants us to have well she deserves it. The kid got a scholarship to a private college here about 30 minutes from our home. What a kid she has been. She has been a pleasure her whole life. Just wanted to share.

Expecting 200 plus. lol
 
Having some family over on Sunday so I'll be doing some butts starting Saturday night. 2-3 butts for PP sammies w/homemade mustard vinegar sauce, some smoked country sausage, fresh made cole slaw and some of Ed Mitchell's baked beans. Should be a great day.
 
Going to my brothers house, and we will be training him on the use of his WSM (I gave him my 18" WSM when I bought the new 22 1/2" WSM) we will be doing some spares using the Pomegranate glaze that Clark used last week, Can't wait. We will also be doing some spicy Cole slaw along with baked beans and tater salad.
 
If the internet is correct, and my Safeway actually is selling spares for $0.99/lb, I'll be cooking spares. Gotta run by there tonight to confirm.

What a great story. We have a 3 year old daughter that is pure joy. I can't wait to cook for her and her friends as she grows. She already loves my grilling/bbq.

Any secrets you want to share for raising such a great child?

Having 25 to 30 people over Saturday. Doing 4 butts overnight Friday night. It's more pork than we will ever eat on the 4th, but I told people to deliver the butts by 7pm Friday and I will stick them on with mine. It freezes well and there's not much difference to me if I do 2 or 4.

I've never done 6, but I'm up for the challenge if more than 4 get delivered.
 
Recession style home made bacon.

I can't afford pork belly so I substituted butt/shoulder. I've got 3 more days of curing the honey bacon and the Charcuterie maple bacon recipes. They'll come out of the cure on Thursday night and hit the grill Friday morning. (YAY 3 day weekend!).
 
Not planning anything. My wife has goofed up my cooking plans too often lately. I'll worry about it on the 3rd.

Votes are in and it looks like it's ribs, burnt ends, a fatty, some ABTS (gringo style) and hot dogs and of course, plenty of ice cold beer. Can't wait!
 
Doing a butt overnight Friday (more like early morning Saturday), getting up early Sat. morning to get the Boy Scout troop food booth set up the park for the big 4th celebration, taking off around the time the parade ends to pull and cooler the butts, prep about 4 sides and chicken to cook in the afternoon. Feeding a bunch of international students from the college pulled pork, chicken and American side dishes.

Getting drunk Sunday as we have Monday off instead of Friday and will probably do some ribs.
