July 4th Q time?

What's everybody doing July 4th? My family is ADD and keeps flopping all over the place--ribs, chicken, dogs, burgers, sausage....

I've been plowing around looking for tips to Q-ahead and reheat so I can just grill some burgers and drink some beverages on the 4th.

Oh ya, and that big cigar for lighting all the fireworks--Clint Eastwood style.
 
We are doing our big cookout on the 3rd. My neice and great neice are coming to town. Not sure whats on the menu,but I want to do some ribs! Yeah. Ribs!
 
Think I will just grill some ribs for the 4th. I barbequed some NC style pork butt a couple of weeks ago and have distributed it among my children and co-workers. Not sure they are ready for more. Expect to make some pastrami soon, but that just doesn't sound like 4th of July fare.
 
Haven't gave the 4th a thought seems like summer is half over already . what I cook depends on who is going to be here to early to say .

This might make some of you cringe... But it is a huge crowd pleaser if you want a relaxing day.

Grill your burgers ahead of time, then simmer and hold them in a crock pot with your favorite aus jus. Serve on a buffet line in the crock pot with sliced cheese to protect the buns from sogging. They get very juicy and tender with lots of flavor. People go wild over them.

Pulled pork is the easiest to do a day ahead IMO.
 
I'll be doing a full packer Brisky, along with pork shoulder, using wine oak staves. The wine oak gives the meat a very killer smoke ring, as well it gives the meat a very good taste!

Doing 5 or 6 racks of Spares ribs Saturday Morning, will be smokeing a Pork Butt friday night for Saturday. Also will smoke some burgers on the WSM when the ribs come off along with beef hotdogs, mac&chesse with bake beans done on the WSM and potato salad. Have family over and enjoy the day with them. This is my best time of the year for me!

The whole family will be away (wife in N Carolina, daughter in Alaska, son in Oregon); just me home alone, so I invited a couple friends to come over and chill out for the day. I'm making baby backs.
 
Wife and I are on the stay-cation plan this Summer, so we'll be home and we were talking about this the other day.

Probably either tri-tip (which I have done many times before) or a first effort with either a brisket (wife would love that and is anglong for it) or a boston butt for some pulled pork sandwiches.

Decisions..... Decisions......
 
I dunno, I like that idea actually. That's how I always serve my tri-tip for superbowl parties etc... True, people do like their burgers off the grill etc... but I can see how these would be full of flavor.

My wife and I are both originally from Cape Cod (Sandwich) and her family is still there so we always spend the 4th on the Cape. Huge fireworks display on the beach down the street from my in-laws place. We are talking several hundred people on the beach with several families competing with fireworks all in violation of town and state laws. The town could care less and everyone has a blast.

Anyway, my BIL has held a party for the past few years at his house in the same neighborhood and I always smoke something for the party. He provides the keg of quality beer, I'm thinking Cape Cod brewery IPA this year, and I provide the meat and time. I'll probably smoke a full load of ribs and beans and then grill up on the kettle whatever all the friends and neighbors bring themselves. In the past this has been chicken, beef tips, vegi kabobs, etc. I gave my FIL my old Brinkman offset a few years ago so I will also have that on hand in case I need space for the beans for some extra ribs.

BTW, the ribs will probably go on around 10am and the keg will be tapped around 10:05.

I will be doing ribs one day and butts over brisket another ! Folks I bowl on the summer league with ask me to do a butt for them . So I will be doing atleast 2 butts maybe 3 Sunday or Monday
