Jerk Shrimp with a Twist and Desert

So, wanted some spicy sweet Shrimp decided to try something new. Took some fresh shrimp and made a baste of Walkers Wood type Jamaican Jerk seasoning, some EVOO and some Honey, mixed together and coated the shrimp for an hour or so.

Got everything ready for the desert, two very ripe Plantains, crushed some Pistachios, Agave Nectar, Banana Leaves, dried Mission Figs and some Raspberries. two tbsp of Butter. This is a recipe inspired by one of my favorites Rick Bayless

Start some butter in a sauce pan, cook it till it's lightly browned, add a quarter cup of crushed up Pistachios, and simmer low and let the nuts roast in the browned butter. Add a couple of tbsp of Agave nectar and your sliced mission figs, then add a dash of Anejo Tequila. And always test your Tequila by taking a swig or two and make sure it is still good :)

Take your sliced in half Plantain's and roast them for about 25 minutes until the skin is nicely blackened, can you figure out when they are done? They come out on their own

Slice the seam off your Banana Leaves and cut into about six inch wide strips

Served the Jerk Shrimp over a Mexican Style Rice, came out really good

Put the Plantains, sliced about half an inch thick on the leaves in a pan and cook them directly over the burner. The Banana leaves put out a beautiful fragrance and flavor the Plantains as they heat up

Add your sauce with nuts and figs on the cut Plantains and then some nice Raspberries on top.
