MY FIRST COOK!!!

Fired up the SMC at about 8am. Used a 1/3 chimney of charcoal to get it going.Buy 9am it was stable and chuggin along at 240f. Put the brisket on and its cruising at about 240 now.

Man, its hard not to look!

Far out Big Tim. What size brisket? Looks like you may have a little experience with these?

Congrats. There is nothing like the first cook! Please let us know how it comes out - and post some pics. You will always remember this day.
 
Things are going great. I can't believe how easy it is holding the temp on this smoker...

I ordered a whole brisket and my butcher screwed up and got me flat. It weighed about 7.5 lbs after trimming...

I will post up some pics of the finished product...
