Irish Stew

Not a lot to post - just the recipe, no action shots.

I picked up a 4# corned beef flat from walmart yesterday (4.99/lb), turned out to be 3# of meat. The instructions on the package said to simmer for 50 minutes per pound.

I simmered it for 40 minutes in a little over a gallon of water, dumped the water, rinsed it & the pot, and brought it back to a simmer again for another 2 hours or so. When it started feeling tender I thew it on the genesis with some pecan chips... this is the first fire I've had in the Genesis - not a big deal, all 3 burners were on medium.

I took about 3# of potatoes, cubed 1/2", probably 1.5# of carrots, a red onion chopped, a head of cabbage, and 4 or 5 jalapenos. I'd reserved ~1/2 gallon of the 2nd boil water, maybe less. I topped it off with tap water. I brought the carrots & potatoes up to a boil, added everything else, & it was done when I checked it about 20 minutes later. I've had about 3 bowls of this stuff & I'm happy with it. I've only had corned beef & cabbage at the bar, & I really can't say I remember how this compares, but it's a darn fine Irish Stew IMO.
