Indy 500 Beef Day

My neighbor bought half of a cow from one of his customers, so he's emptying out part of his freezer and my WSM is happy to be on the receiving end. I've never tried this combination before, but here is what I have.

Here is what I have and how I am planning to cook them. Any comments or tips welcomed. I don't have exact weights on anything because I didn't bother to weigh them.

1 Beef Arm Roast (2lbs?) - Pepper, Salt, OnionP, GarlicP - to 160, foil and cook to 200, remove and rest. Slice to serve
1 Beef Chuck Roast (3lbs?) - Wolf Rub Bold - to 160, foil and cook to 200, remove and rest. Pull to serve.
1 Beef Chuck Roast (2.5lbs?) - Pepper Stout Beef Recipe - Cook to 160, put in pan and then in oven to finish.
3 large Beef Ribs - Spicy Beef Rib Rub - 3-2-1 method.

I'm also going to throw on my modified Keri's Hog Apple Beans once I pull the PSB.
 
Not entirely, I haven't been sending pictures of my empties yet....:) I'm old and have little kids though so my drinking abilities aren't that impressive anymore. Miller Lite only for me today instead of a bunch of IPA.

I ended up foiling the chucks at 155 because the arm was ready to be foiled. I've never gone that early, so does anyone know what the impact will be versus doing it at 165?
