Today was the inaugural smoke on my new 18.5" WSM. I decided to do some baby back ribs that two of my coworkers had requested. I have them rubbed up with some of my homemade rub.

I started the WSM using the Minion Method. I lit 10 coals.

Once going, I added 3 chunks of cherry wood and put the baby backs on.

The WSM is smoking along nicely.

Here they are at the 4 hour mark.

I pulled them off after 4.5 hours. They were nice, juicy and tender. While waiting I drew up a mock logo for my fake BBQ catering company. LOL!

I had to taste test them of course and they were great!!! I hope my coworkers think so. Thanks for looking!
