In praise of rib tips...

My weekend smoke included both spares and baby backs...

I have come to never use foil on my smokes and always use water in the pan. I never sauce, just rub before the smoke. Sometimes I'll use worcsteshire before the rub, sometimes light coat of mustard, sometimes nothing. Always comes out tasty. Just my method and it seems to work.

Now, after this smoke, I was trimming the spares and taking the tips off (I don't cut the tips off until after the smoke); the rib tips were so meaty and good I ate em up before setting the table!

I prefer spares by my wife's choice is baby backs. Tips, just another reason to love spares...just thought I'd share.

Living in the Chicagoland area I can tell you rib tips are almost as popular as ribs. You can buy packages of just rib tips in the grocery stores. You need a meat cleaver to chop them up when your done smoking them. They are a little messier to eat than ribs, but I love them.
