Thank you, @Chris Allingham for hosting this wonderful, friendly and informative website.
And thanks, members, for everything I have learned here from dozens of you.
You're all also guilty of emptying out my wallet to splurge on a better grill and all sorts of accessories I previously was unaware of or I pretended I could do without.
I've been grilling since my late teens, as my late father had always grilled during our summer vacations away from the city. But for decades, there was a lot of guesswork involved and the finished product varied from cook to cook.
Yes, before joining here, I discovered the rest of the Internet and a magic site called YouTube where I could watch 10 trillion chefs cooking the same cut of meat, each one in a different way. But here on the forum, is that back and forth conversation with multiple participants and the choices to make which suits the reader.
Since becoming a member, my gas grill BBQs have been almost consistently perfect time and time again! My family and guests are really impressed.
Because I usually cook quantities, it's usually done on the gas. But when it's just the two or a few of us, back to the Performer I always go. There, too, the input from forum conversations has made me a better cook, which is really important in dealing with a charcoal grill's ever-changing temps and zones.
