Hello from California! I have discovered smoking after having a new ECB (brinkman) sitting on my patio for years and never using it. I have had many BBQ's (mostly Weber) over the years and still own quite a few. After retiring, I decided to smoke my first meat on the ECB, St. Louis ribs (still learning the acronyms!), and they turned out wonderful! I did two more slabs last week and started to do modifications on the ECB and found this website in the process. After reading many threads, I went out and bought the 18.5" WSM and just assembled it today. I am going to put it on wheels and can't wait to use it and learn more from everyone on this site!
