I do the same once in a while if I find a superior rack......
My beef butcher has the racks in the fridge and cuts steaks if that's what you want to size. It's nice to have a choice like that.
I can drop multiple hundreds in minutes there.....those whole cuts are expensive. I have 2 steaks left as of last night.
 
Damn, I was JUST there when I got the Strip Loin and saw the Prime Briskets on sale for the $3.99 and darn near bought one but my freezer is pretty full between a pork butt, and the choice brisket I got on sale for $2.99lb at Costco a week ago or so. Darn freezer is loading up. And will be loaded up some more once I get that Strip Loin butchered and portioned.
 
I was "browsing the briskets" and I happened to notice they were all marked $4.49/# and the display sign said $3.99, so I flagged down a meat cutter and asked him about it. I had one in my cart at the time. I was thinking the briskets were all mislabeled, but he tore down the display sign and re-labeled the one I had in my cart.

I brought home 2 pork butts from COSTCO last visit....had to re arrange the 2 freezers I have to make them fit.......
I want a stand up as well but I think I am out of my mind.

That was when you should have mentioned the other ones you had in your cart........

We were in Winco earlier in the week and I noticed their "USDA Choice or Better" briskets were $3.88/#. I don't know if that is an official USDA classification, or just store-branding.

I always check the price of brisket, everywhere we go, even though I may not have any intention of buying one. To me, it's kind of a barometer of beef prices. Does anybody else do this?

If you had brought them to the register and had them rung up at the $4.49 you could have mentioned the sign and they would have honored it. My understanding is they're compelled to

I think it's an unwritten rule that you don't freeze a brisket. It's one of those things guaranteed to start an argument, like fat cap up or down. Personally, I wouldn't hesitate to freeze one (and not tell anyone about it), but December is coming up and prime rib will be king once again!

Brisket, turkey (or ham), prime rib, oh my! 'Tis the season (for over-eatin')!

Just wanted to add...of course, the meat cutter applied the new label over the old one, but by shining a flashlight through the labels, I could see that the original pack date was 10/31/23 (sell by 11/07/23). That means the $4.49/# price change happened at least 10/31 or before, and any briskets that were sold between at least 10/31 and 11/02 were sold at $4.49/# even though the display sign said $3.99/#. Moral of the story: read the label. Mistakes happen.
 
When I see that kind of thing, I simply put what I want in my cart, take it to the register and if it rings at the higher price I say "hey the sign over them said this". They always send someone to look and regardless of the store, I have never seen them not honor the lower price.

I freeze them all the time...I drive an hour to get good ones and I don't drive that far each time I want one.....
Maybe I don't see the difference, they come out great every time.
 
Well now that I know I can cook one, slice it, package it serving sizes and have it turn out as good as the day I pulled it from the smoker, I am gonna be doing more of them and freezing more when I find them on sale. Wife and I love them. And honestly they're REALLY good "cheap eats".

I did that once several years ago when the charged price was different than the sign price. I had 3 of the items. They sent someone back to check and he confirmed the advertised price. The cashier said their policy was to give me the items for free (sadly, it wasn’t brisket), because if the State department in charge of Weights and Measures had discovered the error, the store was subject to a hefty fine, so they “rewarded” customers who discovered pricing and charging errors.
