I'm not so sure this will help with the Atkins diet, but I always cook enough to save a butt's worth for my next pot of Brunswick Stew cooked in my 10 gallon potjie pot!
I love this thread .. Darrin M's comment reminds me of a Homer Simpson line 'Mmmmmm pork fat ... is there anything it can't do?'.
I did something different with my leftover pulled pork tonight and it was quite good. There is a pic of it here.
Put about 1C corn, 1/2 onion, a chopped gr pepper in a pan with butter and sauteed a bit, let it get a little brown. Turned heat doen to medium low, added a good handfull of pulled pork and some tequila habanero BBQ sauce I like (not too much sauce .. perhaps a couble TBSP). A little salt and a generous grind of black pepper. Heated until the pork was warmed through and served it.
I'm going to try this with some other veggie and fruit combos.
