I think I'll call it bacon

While breaking down a pork butt last weekend I found a couple of small pieces that resembled bacon. And although not quite as good looking as the authors, I managed to do this.

I wasn't sure if it would be more hammy or bacony?

looks, acts and tastes like bacon to me

And since my parents were in town visiting we made a trip to DiBruno Brothers and picked up some cheese, salami and bread and made one of the best sandwiches I ever ate

Whipped up a quick pesto aioli

and added a gruyere and Maxx365 cheeses

bacon and Toscano salami

I don't have a panini press

It really was a tasty sandwich. Just the right amount of sharp, tangy, creamy and smoky...

Agreed. I really like what you did this weekend. I am tackling pork belly and jerky this weekend...but after looking at your photos I am going to back to buckboard again.
