We're gonna be invaded for late Father's Day Saturday. Son in law will be taking me and daughter's partner out to the range for Father's Day in Marengo. (I definitely need the time and practice since I am going for my recurrent training and requalification later this month. So, late tomorrow night I have a bone in pork butt and brisket point to go into Big Z. Early in AM a rack of plate short ribs will be going in as well. I'll try and get photos

Just cleaned up Big Z. But I will say I think it's getting time I order a new fire pot and ignitor rod. I am feeling "divets" in the steel. Cool thing is I think the ignitor and fire pot are generic

Just came in from placing 2 of the guests of honor on Big Z. (the brisket point and the pork butt). First thing tomorrow AM plate ribs will be placed on

Current probe condition with the short ribs. Everything holding nice and steady. I definitely think I want to install a new burn pot and igniter rod soon though. Definite wear and tear on the pot. Don't want to be caught high and dry next time I need Big Z Probe 2 is just plugged in and hanging out. So the 92 deg.

So sorry, things got REALLY hectic here. So I could not get photos of the served up Q. But, suffice to say...................incredible. Very pleased with how everything turned out. Brisket was melt in your mouth, pork butt fell to pieces with slightest "push" and the bone just popped right out. And the beef ribs had to be the best ever off my pit. Absolutely incredible. I was able to at least get a taste :D, fantastic bark on the brisket and butt. No wrapping, no spritzing.....none of that stuff. Just let it run when I hit temps, I placed in disposable pans, covered with foil cover, and everything went in the cooler.
Could not have been more pleased, oh,.....................and my shooting was pretty darn good as well!
