How to remove the bone from a picnic?

I know I have seen these instruction on the board, but I have spent the last hour or so searching and can not find them.

I doing some buckboard bacon and couldn't find a boned butt, just a bone in picnic.

I have only done butts once in the entire time I have had my WSM , unfortunately while everyone else loved the pulled pork, my wife didn't care for it. That one time I could only find butts that were already boned. So I have never done this.

Any help would be appreciated.

I couldn't find it either, Bob, but I did find some simple instructions on the net with photo's on how to debone a whole pork shoulder and since the picnic has most of the bone, maybe you can adapt this to your situation..

I think the most important thing is to use a sharp knife and stay close to the bone. I don't think you can screw it up. The worse that could happen is that you end up cutting it in half and you have two roasts.

Steven Raichlen's "How to grill" book shows how to debone a picnic in the Jerk Pork recipe. it looks pretty easy. cut to the bone on one side and use a smaller knife to cut around the bone enough to pull it out if i remember right.

I just finished, I guess my knives aren't quite sharp enough because it was kind of a pain in the butt (pun not intended). I went to the link that Bill posted. The process was simple enough, and I don't think I did too bad of a job on it.

Thanks for the advice.
Buckboard bacon here I come.
