Hey guys, Im doing 6 racks of Baby backs tomorrow and my wife hates dealing with bones. She picked up a packages of these "Ribs on a Stick" from the store. The package is about 1.6 lbs, Im just kinda of curious when to throw these on? I plan on cooking at about 250 so the baby backs will take about 5ish hours. Thoughts on when to put them on? Or has anyone done these before?

Thanks in Advance.

Says it's center cut pork loin so I would treat them like boneless loin chops. Shouldn't take long maybe an hour or so till they reach 145ish, cover and let them rest.

good morning John,
seeing you're in Oshkosh, and reading "ribs on a stick", i'm guessing she bought those from Festival Foods just off of 20....
I've have those a few times, it's actually a portion of the pork loin with a skewer.
they can dry out so you could brine them in a simple mixture of 4 cups water, 2 tablespoon each white sugar and kosher salt....

at 250ºF they'll be ready in an hour or so...
