How many ribs will fit? (WSM 22")

Hello Everyone -

I've got a question regarding capacity on my WSM 22". I'm looking to smoke twelve full racks of St. Louis cut spare ribs (from Costo / 3-pach - beautiful ribs). I bought a set of rib racks from Amazon and getting ready to try them out. I bought the "Outset Dual Rib / Roasting Rack"

Has anyone been successful with cooking twelve racks of ribs like this? (These Costco St. Louis cut ribs are pretty big/long ... beautiful ribs).

Thanks very much for any insight y'all can offer.

Yes, I saw Chris's section on "Increasing capacity" after I posted this. I'm hesitant to curl the ribs like that, as I'm planning on doing a "2-2-1" (foil wrap) and that could get kinda messy with a curled rack. Regardless, I have to make this work somehow. I have our annual Pig & Oyster Roast tomorrow night: I've got three bushels of Chincoteague oysters coming.... I'll have four butts cooking on my Cookshack... and finally, doing twelve racks of ribs on my WSM...somehow. :)

I was able to fit all twelve racks on my WSM 22.5"! Six ribs in the rib-rack on top grill and six ribs on the rib-rack on the lower grill. Thanks for the hint about stacking foiled ribs.

They were a huge hit. I fixed them Johnny Trigg style. They went well with the six hundred Chincoteague oysters we had.

I have cramed 10 in my 18, theres no way 12 dont fit in the 22, i did a small wedding cook in my 22, 2 packer briskets on top, 2 butts on bottom. Theres no way 12 dont fit

My apologies for the lack of pictures. I had too much going on at the time: 12 racks on the WSM, 4 butts in Cookshack Smokette 009, setting up for 2.5 bushels of Chincoteague oysters, cleaning/prepping for 60 people to arrive soon.

I used a rib rack which holds six racks of ribs (see original post above for link at Amazon). One rib rack on top, one rib rack on the bottom. Oh, I also had a 16" clay saucer in my water pan - all foiled up. Maintaining 225 was not a problem.

This was my first time using the rib racks. And now that I know I don't have to put the foiled ribs in the rack, it'll make the cook that much easier. I can picture stacking the foiled ribs: two one way, two perpedicular to that --> like a stack of firewood.

LOL - just pullin your chain. Sounds like you had your hands full. ...and a lot of fun.

glad to hear it was a success! 12 racks at once, that quite a cook! next time you'll have to get someone to photograph the cook! i bet it was quite the sight...

You can stack foiled ribs, they don't need space between them at that point.

Yup... That is what I would do! Use your ribs racks for 6 on each cooking grate and then stack them when you foil them. Then, back to the racks for the final hour...

Good luck!

I'll get some pictures next time - promise. We're already planning my daughters graduation party in May (from Cornell! Go Big Red!). I'll be doing "All-Things-Pig" for that party.
