How can I let spammers know that I am not a man without opening their emails?

Short story is.... do nothing at all. Don't respond, don't click the unsubscribe link, and shoot.... if you can tell by the subject line, just send it straight to the bin. All the unsubscribe link will do is confirm you have an active email. Tracking pixels are used in much the same way, as soon as you display the message, you've just confirmed this is a live email address.

I just glance at all the spam mail real quick to make sure nothing important got there by mistake (I don't mean open it) and then hit the delete and all goes away at once. I just wish there was something ALL OF US could do to stop people from intruding on our privacy. Sorry, but it is a shame what we all have to put up with, by mail, by phone, by computer.

Until there are both methods to catch these scammers *AND* significant criminal penalties, this activity will just continue to get worse.
PS: bin 'em means throw them right in the trash bin.

I understand that a lot of people do it because of tough times, but I agree, there should be some kind of penalty for invasion of privacy. We just seem to be loosing more and more of it every day.

What email service and/or email client do you use? i.e. Is your email address an @gmail.com , @outlook.com, @icloud.com etc?
Are you using Outlook or Mac Mail, or just a web browser to view your email (or just your phone?). Some more detail would help with getting your system a little cleaner.
In gmail (for example) the "Report spam" or "Report phishing" options work well. As stated, you can also apply filters to certain senders to automate future mail flow, but often, this only works on repeat senders. Most mail services have similar functionality.
<scratches head> As reprehensible as it is, how is it an invasion of privacy? More than likely, your email address is available publicly, albeit not necessarily identifiable as you. I don't like it either, but ignore it and move on.
For one thing, I have a land phone. I need it to get in touch with DH, daughter and Dr.'s. I don't need to hear it ring all day long from spammers. I don't like it waking me up in the mornings or from my naps or when I am sick. Yes, to me, that is invading my privacy.
My email address is for just those that I give it to and want to hear from. Complete strangers using it to send me junk mail, to me, is also an invasion of my privacy.

I did not realize that you were conflating the scam phone calls in...... those DO have legal protections that email does not, but again, due to how many ways that the source connection is obscured, there's no effective deterrent. Yes, I know that the FCC new mandates have just gone into effect, but until you can tie source & target together and drag the perpetrators into court, there's no reason for them to stop.
