Hot Wings 'n' Thighs - WSM. Advice Please.

Hi.

Doing a bunch of wings 'n' thighs for dinner tonight on the 14.5". (Standard Method).
Any advice on cooking time/temp much appreciated. I've usually done these in the kettle or SJ. (I'm looking at a couple of hours max).

About 75-90 min @ 225-240F for boneless thighs has been my experience. Then to get a good sear carefully remove the hot center cylinder of the WSM, put it aside and place the cooking grate(s) directly on top of the charcoal chamber for 2-3 minutes per side.

I've also done them without the searing step and they weren't near as good.

Dialed in at 240*. All good so far.

Good choice to go minion. Even on shorter smokes like thighs that's the method I've been using with the 14.5 and it hasn't let me down yet. I'll be doing the same thing tomorrow night with some Jerk chicken thighs that started marinating a couple hours ago.

Good luck with cook and let me know how the searing technique works out. By the way, they'll sear fast, so be sure not to leave them unattended during that last step.
 
Yep, minion was the way to go. She sat steady @ 250* throughout.
Did the sear as suggested. Lifted off the centre section, & plonked the top grill straight on the charcoal ring. Two mins either side. Had to keep a beady eye on them.

Without a doubt that's an excellent way to do chicken. However, I have, lately, been doing a high heat cook with the WSM, without the water pan as per Chris' excellent tutorial on the subject. It is extremely easy, and does a FINE job:

These directions are for the 18.5" - you can use ONE full lit chimney with the 14.5" (instead of the 1½ as used in the 18.5).

Just a thought...
