Hot and crispy thighs at a cold and snowy cabin!

Hiked into my cabin this weekend and came prepared to grill some thighs. The Genesis was a little frigid but in good shape!Lots of snow here in the Pacific Northwest…so great!Just did rub under the skin and a light rub on top. Got them in at about 400 and let them sit while we sipped on Cabin Manhattans!Got some good crisp on the skin and did some roasted Brussels and some rice with a mole sauce that you would have thought came straight from Oaxaca Mexico!Had the leftover chicken for tacos this morning! Cheers!
