My first shot at high heat ribs wasn't great. Too much lit, and temps were very high the whole time. Got it pretty close to perfect this time. St. Louis trimmed spares today. Due to timing/distractions, I left them on a little longer than I wanted too, but they came out great. I used about 18 pieces of K, and both charcoal trays 3/4 full of unlit. One piece of hickory in each tray. Temps stayed pretty close to 350 the whole cook, with minor tweaks of the vents here and there. No foiling.
For rub, I used 2 TBS of Red Eye Express, 2 TBS of Tsunami Spin, and 1/2 tsp of Cayenne. Glazed with 1/3 KC Masterpiece and 2/3 honey.
I like this method. The ribs come out crispy on the outside, and tender/juicy on the inside. They were a big hit as an appetizer!
