Hickory Identification

Can you guys help me out. I think these came from hickory trees on my property and would like to confirm this. I'm not all that good at tree ID. Thanks. Also, does the age of the wood make a difference in flavor of smoke, ie older wood taste better??

In regards to age of wood, I do not know if it makes a difference.

Darrell, thanks for the great link. Was able to identify some trees I've had questions about. You can tell when you hooked on smoking when you walk through the woods trying to identify good trees to smoke meat with

Six months or so is plenty seasoning for hickory chunks for smoking with. Past that is fine too, but I'd try to protect any wood already seasoned from the elements best I could unless I was planning on using it soon. Also, you will get a cleaner smoke with less bark.

Craig, I've got sticks of hickory that I've been working on for over 8 years. I keep it dry and in sealed containers(keeps the pests out.
