Hi, just got a new 22.5 WSM so keen to have a go. Totally new to barbecuing American style, originally from UK so hopefully can learn from all of you. Went to a party and saw one of these things working away so have been thinking about getting one for a while. Was originally thinking a kamado style grill would be better and may eventually get one as well but hoping to put this one to some good use.

Thanks very much for the welcome. Debating whether to do the prime rib for Christmas on it, sounds good, bit worried about getting good gravy from it. Will try some chicken as a dry run this weekend.

Also down the freeway from you. I will echo the sentiments of Bob, there is a lot of BBQ mojo concentrated in the IE.

When Bob is making a recommendation about checking out the CBBQA, he knows what he is talking about. Not sure if you remember the commercials where Sy Sperling said "I'm not only the President... I'm also a client". Well Bob might not be President of the CBBQA, but he is on the Board of Directors (I was manager of the Vote for Bob in 2016 campaign) :D

You will love this site, so much information from so many great people!!

Really excellent and have done that recipe a few times since, its from the cooking topics section here beginners spatchcocked chicken.

Even my partner who is mostly vegetarian was highly impressed and she's requested it a few times since. So definitely a win.
