I'm a southern gal that finally bit the bullet and bought a smoker after years of saying I want one. I have already been creeping this forum and videos which have been great! I am an avid researcher and I not only love great food, I love learning the science behind how things work the way they do.

Anywho, I bought an 18.5" WSM and she arrives today! I'm excited to start this journey and even more excited that I found this forum! Have a great week!

Good for you! Once things get “seasoned” (read “gunked up”) and you get a few cooks through it, the clouds will part, sunbeams will shine on your grilling/smoking area and fine feasts will issue forth from the WSM at any time you desire.
