Brined top round for 10 days. Went to desalinate and found the brine solution to be very viscous. no bad colors or smells at all. Meat looks nice and pink. I have never seen this in 15 of making Corned beef and Pastrami. Is it ok to eat? Did not find any good info on the internet So I am turning to the best brain trust I know.
