Help Requested - Chuck Short Ribs

Hi VWBB Family, I am going to smoke individual chuck short ribs....each piece is about 3" by 2" by 2". I plan on smoking at 225-250 temp range but am not sure of general time, given they are individual pieces versus a rack. Any guidance would be greatly appreciated.

Thank you.

I did these a couple weeks ago. Outside temp was about 55, I ran the wsm at about 250 throughout. No water in the pan. Took about 4.5 hours for four short ribs to get jiggly.

Hey, James. I've never cooked them individually, but @Darryl - swazies found this link at "How to BBQ Right", and I've found Malcom usually does a great job with his recipes, etc. Should at least give you some guidelines on time/temp in addition to TC's input just above mine.

Let us know how it goes!

I smoked a few just as you described the other night. 275 for about for around 4 hours. Misted them a few times. No water I’m the pan of the wsm. Buried the post oak chunks. Turned out good.
