Help for a weekend smoke

Hi all,

I know this is against the grain here but I'll be headed up north here in MI this weekend and I was requested to smoke something. Seeing as I don't have the time I considered smoking it up at the cottage. At the cottage they only have a propane Weber. They don't have charcoal! Instead of hauling my WSM 3.5 hours north to smoke a small amount (6-8 people), could I attempt to smoke on their propane Weber?

Has anyone every done this before with ok results? My thoughts were heat up half, make a wood chip pouch out of foil, not sure where a water pan would go and just do a short cook (brats?).

Or should I just saw screw smoking for the weekend and just dry rub chicken breasts, tenders or a whole chicken?

Thoughts, experiences, advice, etc. would be GREATLY appreciated!
 
Brats would work fine on the gas grill. Here's how I do mine (kind'a backwards from some recipes). I brown them, just to get grill marks, over direct heat, then put them in a disposible aluminum pan over the indirect heat. Add a 6 pack of the cheapest beer I can find and a sliced up onion. Simmer for an hour to cook them through. They can sit, simmering on the grill all day if you want, not time sensitive at all. Add more liquid if you need to. They are always ready to be plopped on a bun. Hot and moist. The longer they are on the better they are.
 
you can definitely smoke on the gas weber. Make your smoke chip packet, cook using indirect heat with the packet as close to the lit burner as you can get it.

You may want to use more than one packet for a longer smoke.

Do you have room for your WSM in your car or truck? The 3.5 hours part doesn't matter, the only extra effort is putting the smoker into and taking it out of your car. I've smoked on my propane before but to me it's just not the same. They think enough of your food to ask you to smoke something..I would reconsider. Just my two cents.

Also, don't need water. All water does (IMO) is help to control temps. I don't see a diff in my end product now (using clay saucer) to before (water).

Do these have the normal brat base taste? Ever since I smoked brats for the first time this year I very much prefer the smoked vs. grilled. I feel the flavor is completely different and I like it that way but I might need to try this recipe!

I was hoping to do a quick smoke, brats, wings, thighs etc. Nothing longer than 1.5 hours since I don't want to use all their propane! And the girlfriend is making cheesy potatoes we are going to attempt to smoke since we like homemade smoked mac and cheese so much!

Only issue is I'm borrowing a friend's car so I'm not too certain she wants a smoker in the back even if it was on a tarp and what not. *They have also never tried my smoked food, only seen pictures and I guess I should rephrase....they asked me to "do the meat." not to necessarily smoke it.

Don't smoke EVERYTHING. Have some sides that aren't smoked otherwise everything tastes the same.

Yes, with a bit of beer and onion. The thing I like about this recipe is it's totally not time sensitive. If have a bunch of family over and everyone gets talking it's not a crisis to start the meal at a certain time.
 
I would do grilled things like grilled chicken, wings direct over low heat, steaks. Use your dry rub and sauces like you normally do though, which will give you the bbq base.
 
I was considering chicken breasts with a rub.....hmmmm. Anyone ever done a stuffed meatloaf on a grill?

I have done a stuff meatloaf on a kettle, not a gasser.
Overall, if they asked you to 'do the meat', I would do thing(s) that will be straightforward for YOU to do, so you can enjoy the weekend and not stress out about trying to do something you haven't done before, _especially_ doing it on a gas grill that you haven't used before?

so enjoy yourself up north. Walking the bridge on Labor Day?
 
Not walking the bridge, I won't be that far north.

Ended up making jalapeno cornbread, the gf made cheese potatoes that we aren't going to smoke and up there the dinner we make will include those plus rubbed chicken breasts grilled and grilled corn! Simple but delicious!
 
Probably too late for this trip. But I might have smoked up a pork butt and pulled it at home. Put it in a foil pan(s) and reheat in the oven or on the grill. Grill up some brats or jumbo hot dogs and top with pulled pork chopped onions and bbq sauce. Pulled pork travels and reheats extremely well and can lay a big smoker flavor on top of other grilled meats.

I'm with you on the jalapeno and grilled corn cornbread too.
