Just joined the site, been lurking for a couple of months. I just purchased the 18" WSM last night, I am going to assemble it tomorrow morning and fire it up! About 3 years ago my cousin gave me his Great Outdoors Smokey Mountain Series box smoker (charcoal), and although it was a cheaper setup, I made a lot of delicious meals on that thing. Nothing like getting a free, seasoned smoker! The bottom is rusted through now, and I got a bonus last week, so I decided to go for it and get a new toy.
Prior to that, I spent 9 years (between a hiatus from college, then going back and getting my degree) working at a place called Cooter Brown's Rib Shack in Jacksonville, Al. We had a big gas smoker with double doors and a rotisserie. We could do many cases of spare ribs on that thing, feeding it with big split pecan logs. Some of the best years of my life, cooking ribs and drinking beers. If it only paid what my grownup job pays, I would have never left!
Anyhow, good to be on the site, and I can't wait to get cookin' again.
