Hello all! New to smoking just bought a WSM 22.5". 3 weeks ago. So far 2 beer can chickens (amazing) , and 3 racks of spare ribs (also amazing). ( I have pics). This weekend pork (butt , shoulder) and possibly a pork belly ( to do the drip? Like the b.0.b or side by side?). Anyways getting a maverick before the next cook and soon to start modifying!! Very excited young new smoker!

Cook#2 on my WSM
Did the 3-2-1 method , minion start , apple chips, full water pan,
- slightly over cooked but still amazing all homemade sauces 3 different kinds and a strong sugar base for the homemade dry rubs ... Cook #3 this weekend pork butt 1 maybe 2 ? Any tips ?
