I've been grilling and smoking for a few years but finally picked myself up a charcoal and chunk burner this week. Went with the 18.5" WSM. Looking to do its virgin smoke this Saturday.
Up to this point, I've been gas and charcoal grilling, throwing some wood chips on the charcoal to add some smoke flavor. I also have a Bradley smoker that has been fantastic. It is a little more pricey to run and probably isn't quite as good as the WSM or any other wood/charcoal, but its been good to me. I'll be keeping it around as it is just incredibly easy to smoke cheese on that thing and I do a couple dozen pounds every winter.
Luck would have it, my brand new smoker came without the heat shield
Good thing i have a concrete deck to do this on until Weber sends me one.
