Hello to all!
I am totally new to the WSM but a year ago I bought a Mini Green Egg in Ohio and brought to Brazil and since that short year, I have found a new hobby with BBQ. Two weeks ago I returned to the states for a quick visit and bought an 18.5 WSM and a DigiQ DX2 and returned back to Brazil. Now sitting inside my apartment, I have yet to take it out of the box and use it but plan on using this smoker within the coming week. The Brazilian's have a decent BBQ with mostly just salt for seasoning but I don’t see much of any low and slow cooking here, so I am looking at some of your posts and getting some ideas before getting started with my first smoke on my WSM. I am grateful for the knowledge received from the Weber Virtual Bulletin Board.
