Hello everybody. I don't even have a WSM yet but have been browsing the site and forums, picking up all kinds of tips and tricks. It's kind of incredible how much good information is available. I currently have a Brinkmann Professional charcoal grill and do my best to BBQ on it but maintaining temp is a big challenge. I have to check it every 20 minutes to add more charcoal (I keep a chimney starter going with hot coals during my cooks). This makes for a long day when cooking up a pork shoulder. I hope to finally splurge on an 18" WSM maybe next month. Until then, I'll keep researching on the forums.
BTW, I noticed that my local Lowe's just started their Memorial Day sale on Kingsford blue; 2-20lb bags for $10. Time to stock up, guys!!
