Hello all my name is Waylon. Bought a WSM 14” a few weeks back after using my Weber kettle to smoke a few things and realizing an upgrade was necessary. Used the WSM a few times so far and love it. It keeps a constant temp so much easier than the kettle. Made a 6lb Kalua pig/butt last weekend that turned out pretty damn good. Can’t wait to make a few adjustments and try it again. Started keeping a written record of ingredients, weight, timing, temp, etc which I still find myself looking over and thinking about probably more than I should.
