Good morning everyone. Just wanted to say hi. I'm Chris from Cincinnati. I just picked up a Performer Gold last weekend and am anxious to get back into the world of charcoal cooking. My propane grill died on me, and decided to go the route of Weber as opposed to some cheaply made hunk of metal I'd have to replace in a few years anyways.

I've only thrown a few burgers and brats on it so far, but am looking forward to a whole lot more cooking this Summer.

I've been perusing the site for only a day, and have already picked up countless tips/tricks.

I'm looking forward to talking with you all and getting some inspiration/ideas from your cooks!
 
Chris....sounds like you're a person that make nothing but one good decision after another. Welcome to the site and welcome to the world and delicious taste of cooking over charcoal.
 
Welcome to the group. Once you go charcoal you'll wonder what you liked about that gas fired grilling.
 
Welcome from 5 hours away. My Performer is my grilling bread and butter.
It's one versatile well rounded piece of equipment. If you're diligent you can go low and slow with it, or you can go hot and heavy.

These are all easy cooks.
I posted these pictures to show you a few things I do with my Performer.
The first picture is my beer can chicken ring. My brother got it made at the local tin shop for 30 bucks, and it gives me room to do 4 BCCs at the same time and it keeps the birds from getting over cooked from being to close to the lid.
Next is just simple indirect cooking. Easy as pie on the Performer.
Lastly is indirect cooking with the grate flipped over. This makes it easy to add wood chips and extra coals if needed. This is how I set up my Performer most of the time. It's just easy.

Here was tonight's quick Tuesday night cook...lemon pepper chicken and asparagus. Nothing special, but turned out pretty good. Lots to learn with the performer!
