So I might have a problem? Oh well…here we go!
I tried to buy tenderloins yesterday for a little gathering I pulled together at the last minute. But my store didn’t have them. But they did have a whole boneless pork loin (center cut) masterpiece for a great price! 11 pounds for $18 bucks.
I cut about four pounds off and put it in freezer and got to work on the big section!
This marinated for a couple hours on counter covered in foil while I enjoyed a beer
Performer was set up for indirect with BnB and some peach wood.
Was able to maintain 350 degrees entire cook (about an hour) and pulled it when the thin end was about 150 and the thick end was about 125. Big disparity there but after a 15 minute rest it was perfect.

This easily fed 9 of us with some good leftovers for tacos in a couple days.
