having an issue with the temprature

so I bought a weber 18.5 about 3 months ago and I'm new to smoking and I'm having trouble getting the temp to go above 225, it takes about 2 hours to get to 225 and then about 3 hours to reach 250 and after that I cant seem to get it to go any higher. is that normal or am I doing something wrong? I keep all the vents wide open but still doesn't seem to help.
 
Are you using a heat sink like water? If so, than that's it's main purpose, keeping temps around boiling 212. Try an empty foiled pan with an air-space if you want higher temps, or start with more lit.
And you could/should be running higher than you think; but if using the built in lid thermo for reference; well that has been known to read quite a bit lower than actual cook temps.

I have no issue getting over 300 with a half chimney of Blue Bag, even with a full water pan. Check again with a good thermometer.
 
that does make a lot of sense, I have been using the water pan that the weber came with and I've been filling it up to the top. ill definitely try it without the water next time, thanks Tim! what's blue bag V_Rocco ?

You can use water for lower temps, probably up to 275 but definitely don't fill it to the top. If it boils over it can extinguish some coals.
 
If you want to continue using water, bring the water to a boil BEFORE pouring it into the pan and as already stated, use more lit to start your fire
