Having a hard time find a Tri-tip with a fatcap!

Everywhere I check no one leaves the fatcap on, the last five I have purchase including wildfork.com always comes trimmed. I both smoke my tri's and also grill them I went to decide how much fat I will take off the roast.
Has anyone found a source that still butchers them without trimming the fatcap? Most of the local butchers don't know that the tri is under the top sirlion which is a shame and how did you become a butcher not knowin that info?
 
You’re in NY. Tri tip never existed when I lived there in the 70”s-90”s.

That said, in California, untrimmed tri tips are common supermarket items. Many tri tip bbq stands cook them with the fat cap on and remove it right before carving for service.

I’d recco you speak with a local butcher who can order you a case of untrimmed tri tips from the slaughter house. The challenge is, most beef comes from large processors and they are the butchers. They decide how the cuts are made and cryovac packed.

If your local butcher gets cattle that’s locally farmed, that might be your best bet for more custom cuts.
