While working on my latest mod for the WSM I decided that chicken was the order of the day, so I took out 4 chicken breasts and put them in a nice brine for about 3-4 hours. Cooked the meal on the OTP. Also threw on some onions wrapped in foil with butter as a side. In addition, I sliced a potato on the bias and cooked in the oven finishing up with melted Parmesan cheese topped with a pop of sour cream with some chopped jalapeno sprinkled over the top.

Chicken was grilled indirect with apple wood for about 2 & 1/4 hours at 325 and finished up direct after saucing to crisp up the skin. The one in middle is the wife's without sauce or crisping up much, as she never eats the skin anyway..............................d

Very nice looking meal Dave. I've got a OTP waiting to be put together. Can't wait to use it.
 
No, not at all, maybe it was a little less now that I think about it. That was also the weber temp gauge, so no telling what the temp was on the indirect side, didn't use the Mav. Cooked it to about 155 and let rest.....................d

I looked at Dwain and your cooks and told Pammi Sue the we WILL have BBQ chicken for dinner tomorrow. Don't know what else will go with it,but we are having BBQ chicken! Looks good!
