Hiya gang - tucking a few firsts under my belt tonight. First up: onion flower in CI, dusted w/ S&P & garlic slices in a pot of bullion and bacon fat! M-m-m-m, bacon fat!



Onion on the grill, as well as the halibut filet on the fennel fronds leftover from the fennel bulb for the salad, forthwith!!! Fishy's dusted with Goya Adobo Bitter Orange and black pepper (lip smackin')

time to relax: love my Elejiah Craig! Plated with a garden salad and box risotto, sprinkled w/ parsley and Parmesan...







a rare trick or Friday night treat... Did I detect anything other than visual pow from the black fennel frond? Ever so slightly yes - it didn't taste like other *blackened* vegetables I've had before... We always enjoy Halibut - I would love to catch one, someday! Nice looking halibut, the roasted fennel looks very interesting, how long was it on the grill to turn that black?

My first two thoughts
1. That is for sure a picture of the week.
2. This plate of food in a high end establishment would be way north of $50. And it looks like it belongs in a high establishment.

I'll bet it wasn't more than 10 minutes. Not that this was what I set out to do. I was hoping for a herb/smoke flavor - I was going to put the halibut on rosemary sprigs at first. But after I sliced the fennel bulb for the salad, I though lets try it on the fennel fronds.

@ Bill: have you had the Elijah Craig single barrel? Aw-w-w man, that's good stuff!!!
