Halibut Steaks Over Sauteed Corn and Mushrooms

While vacationing up in Oregon, my wife mentioned she'd like to have some Halibut when we got back. So that is what I did.

We went to our only fish market earlier this week and they had a huge selection of both halibut filets and steaks on sale. It was 106° that afternoon and we had about 2 hours of shopping left to do so we decided to return and pick up the fish on the way home so it would stay nice and cold. When we returned all the filets were gone, except two scrawny little ones. Decided to go with the steaks.



These are most of the ingredients excluding the Yukons, for the corn/mushroom mixture. Recipe called for chanterelle mushrooms but this is Redding. Had to settled for Criminis. Also diced RBP, yellow corn fresh off the cob, lemon juice, tarragon and micro greens.



Potatoes on way ahead of the rest.



Fish and veggies took about 15 minutes.





Corn mixture done.



Halibut about 3 minutes a side over direct high heat.



Plated it up.





This was a fantastic meal, well worth the price. That corn/mushroom mixture was fantastic. Sprinkled the chopped fresh tarragon over the mixture after it was done cooking. Hope everyone has a great weekend. Thank you for looking.

I'm not much of a fish fan, but I do like halibut and I would destroy that plate, that just looks outstanding!
 
Cliff, that is fantastic and I love halibut. Your veggie combo sounds and looks awesome will give that a try.

I posted my Halibut cook here several weeks ago or so, Love that fish!!! yes expensive, but very tasty!!!! You nailed on this one!!! Love the grill marks, I bet it was very tasty!!!!!!
