Hello All,
Tonight I decided to do a roulade of boneless skinless chicken thighs. I had been researching paleo recipes last week and ran across one that I thought I could adapt for the grill. The original recipe called for chicken breast and home made pesto but I was feeling lazy and decided to use stuff I already had on hand - that is boneless thighs and some store bought pesto. Pictures appear below.

Chicken Thighs Butterflied for Even Thickness and Pounded to about 1/4" Thickness Then Spread with Pesto

This turned out OK. The family enjoyed it a lot but I was looking for bolder flavor. I will definitely try this again but I might add some feta cheese on the inside and maybe some creole mustard or rub (or both) on the outside. Sorry I did not get a plated pic - life got in the way and I did not get it done...
