I started a lump charcoal fire and added a chunk of Oak for flavor then went indirect until 100* then turned it onto the direct side to a nice 135* med rare.

While the charcoal was starting, I salt boiled the potatoes then when the steak was resting I "crashed" them in a cast iron skillet and placed them over direct heat until the butter and cheese melted.

I did not get the sear I anticipated but it was still very good.

Dwain as usual a very nice cook. Why did you choose oak, just wondering? If you're like me, it's what was around.

I had a choice between oak, apple, and peach. Oak it is! LOL

Looks very good to me Dwain, tell me more about " smash hots "

I like to boil them in VERY salty water, put a little olive oil in the cast iron, just crack them open by pushing with a smasher, add butter, pepper, onion powder, gaaaalic powder, and cheese.

Dwain, well done. I loved the look of the Sirloin. I like Oak too for beef. The meal looks great!
