Grilled eggplant & foil wrapped onion

Needed some sides to finish up the pork loin from Saturday. So I sliced up six eggplants brushed on some evvo and seasoned them with some Hungarian sweet paprika, salt, and granulated garlic.





Here's the quartered onion with a couple pieces of butter some evoo pepper and a beef bouillon cube before wrapping in foil.



Some pics of the veggies going on the grills. Yes I said grills had to use the gasser too.











Here's that onion sitting in all that juicy goodness. Tastes just like French onion soup. I kid you not.



One onion packed away for tomorrows lunch.

Tracey made a little meatloaf pan sized grilled eggplant parm tonight for dinner with the leftovers. It was superb!!!
 
These are awesome! Is there a brand of bouillon that you recommend? I live in the boonies with limited shopping options but have no problem ordering online if there is something better than a standard grocery store brand.
 
Holy smokes those onions are good!. The Mrs. listed off half a dozen people I have to cook those for....
