Just lit my new 18.5” for the first time! Cooked two racks of a slightly altered BRITU recipe and a turkey breast. Both turned out great. I was quite happy and impressed with how well it held temperature through a relatively cold (for Louisiana, at least) and windy day. This is my first WSM, and third smoker. Had a really cheap stick burner for a while that I wore out cooking like crazy on through a couple military moves. When that finally died, I received an electric drum smoker as a gift that filled the bill, but lacked character or any challenge/process enjoyment. Once in finally gave way, I felt good enough to buy something new and ended up with the 18.5.

Outstanding! Welcome to the show, I have had so many questions answered here, I didn’t even ask! The ideas here are like making love to a widow woman, you can’t over do it, so jump in and hang on!
