I finally had a day yesterday to get out by the smoker and decided it was a perfect day for ribs. *

I don't know if you all can tell, but we recently moved. So we've been real busy with that. And fixing up the other house to rent out. This is a huge step up. It's perfect for our family. But, I miss my outdoor cooking area. Especially when prepping things like big ol racks of spare ribs. But it's ok. I'll build a even better set up eventually. This is only the 2nd time I've used the wsm at this house so you know I haven't been here long. Bagdad is now Bagdid. East Milton, FL is where I call home. On to the food!

Weber sent me out some of this complimentary rub when I had ordered some parts the last time. *Pretty good stuff. To me if the rub tastes like good BBQ potato chips then it's gonna be a good rib rub. IMO.

Great ribs and cute rib taster!!! Great idea on folding over that thin meat that runs along the top. I usually just trim it up but I think I'll give your idea a try next time!
