Great Read for Brisket


 
I wouldn't take too much away from that, if I were you. For instance, there's no point in only buying little bitty briskets or cooking them so slow. I LOVE the state, it's food, and my cousins and friends that live out there, but it seems like just about everyone out there is an expert on the subject of brisket. I can say that 'cause I'm drinking out of my "Don't mess with Texas" mug this morning. Yep. I really am. :o

Somewhat more frank review: I didn't follow most of those directions, have only ever made a handful of briskets and only ever did them using Kevin Kruger's high heat method, and they all were both easy to make and very good.
 
I don't believe everything I read however it did kill an hour on the toilet this morning HAH!

Then it was worth it. It just drives me nuts the way people make cooking brisket out to be a Herculean task that you need to be a smoking guru to comprehend. It's really not that hard!
