Had company coming over Saturday so decided to try a bunch of things I hadn't cooked before.
First was the pepper stout beef made with a shoulder roast that I seasoned with salt, pepper and lots and lots of garlic
. Cooked this on the kettle with 2 lumps of hickory for 2.5 hours at about 225-250. I also put some thick cut bacon strips on to smoke for bacon bits and a head if garlic for roast garlic.
I took off the beef and finished as per the recipe. I added 8 garlic cloves instead of 6 and used Spanish onion. Finished this in the oven.
My wife is a reformed veggie, I finally got her eating chicken again, so for her I did pepper stout chicken thighs. I did everything the same as the beef but the times where much shorter. I indirect cooked the bs thighs with cherry for smoke until they were 1/2 done then finished in the oven for about 1 1/2 hours.
The company had arrived so we had a few wobbly pops at this point so didn't pay attention to times after this.
Grilled some little yellow potatoes direct for a bit and then indirect til they where cooked. I had tossed these in an oil that had garlic and basil in it. This stuff is good. The potatoes took about an hour.
Had everything done and holding in the oven so I drizzled some EVOO on the romaine and threw it on the kettle. Cooked it direct for 3-5 minutes? Until it was a little wilted. Chopped up the romaine, some of the roasted garlic and bacon (remember the bacon? It's been smoking with hickory and cherry for about 5 hours. At this point the fat is pretty much rendered and the slices are firm but not crisp). Tossed all that together with some Caesar salad dressing. Of course my wife left out the bacon bits on hers but I'll keep working on that.
Served it all up with a variety of buns and cheeses for the sandwiches. Must say this was a fantastic dinner. The chicken version turned out very nice, the salad was awesome and the potatoes were some of the best I've done.
We then proceeded to play cards,dance and sing till the sun came up. Which,by the way,is the reason I'm doing this post on Monday.
