Just about ready to pull the brisket off. Approximate cook time 13 hours and then Rest in an ice chest for a couple of hours. Actually going to cheat and just test it for 1-1/2 hours... family hungry
Well the biggest inadvertent compliment came from my wife which she said “I like it better without BBQ sauce.” The brisket was very tender and succulent. It was better than any brisket that cooked on the Big Green Egg.
That's a very high compliment and another exhibit in the SmokeFire awesome cooking results album. It is really a shame that Weber botched the launch of this grill. Now that the worst kinks have been worked out, it seems that the SmokeFire is living up to its promise. I think the sort of recall they did is a prelude to a "reboot" launch by Weber next spring.
