I decided to cook 2 butts today.

Threw them on at about 8:30 am..been checking temps for a while now..holding steady at 256. I turned and basted them at 11 am, when should I do it again? I was figuring around 2:30ish for a final turn and baste. Any other tips you guys can give me?
 
Most folks follow the "half time rule" for turning and basting. Figure your estimated time to cook, then turn and baste at 1/2 that time, again at 1/2 the remaining time, and so on until done. For example, for an 8 pound butt at 2 hours/lb it should take approx 16 hours to cook, so turn and baste at 8 hours, 12 hours, and 14 hours, and 15 hours (8-4-2-1). Start checking your internal meat temps at the 12 hour mark b/c some butts reach 195-205 temp in 1.5 hours/lb. Mine usually take 2.5 hours/lb at 240-260 dome temp.
 
I was just thinking that I forgot to weigh the meat again after I cut all the fat off. The total weight of both was about 16 lbs before trim. I figured the excess fat I cut of was about 4 to 5 pounds. They were pretty fatty.

So i am thinking about 10-12 hours before they are done.

Man this is fun!!
